Family-run Italian cafe/restaurant with mother serving home-made dishes from its open kitchen.

'Stunning little Italian restaurant. Delicious customisable food cooked fresh in house with high quality and flavourful ingredients. The staff were friendly and accommodating and cleared a table so we could sit outside on the terrace in the sun. Great choice of wine. I haven't stopped thinking about the food since we visited 3 weeks ago, 5 stars is a no brainer, I'd give more stars if I could. Will 100% be back - highly recommended.'

TRADITONAL CARBONARA - 2 SERVINGS

Ingredients  

Spaghetti  

Two rashes cut into cubes of Bacon – guanciale  

Handful of Parmesan  

4 egg yolks 

Tbsp of Black pepper  

Method

1) Fry bacon and drain the fat into a separate bowl  

2) In another bowl add your four egg yolks, pepper, pinch of salt and parmesan and whisk until combined (should look a bit like a paste) 

3) Add your bacon fat to the egg mixture and whisk quickly so the eggs don't cook 

4) Cook spaghetti until al dente (firm to bite)  

5) Add one ladle of pasta water to the egg mixture and whisk together quickly to tempura the eggs (mixture should be nice and creamy) 

6) Add egg mix to spaghetti with bacon and top with more parmesan to enjoy
