CHICKEN RAMEN - 2 SERVINGS

INGREDIENTS 

½ diced onion  

2 medium garlic cloves  

Half a red chili diced 

Two spring onions  

1 Knorr chicken stock pot or 500ml chicken stock (1) 

1 Itsu Miso sachet or 1 teaspoon of miso paste (2) 

1 Chicken breast 

2 teaspoons of soya sauce and 2 tablespoons of soya sauce (3) 

1 tablespoon of sesame oil (4) 

Half a tablespoon of rice wine vinegar (5) 

¼ teaspoon of Chinese five spice 

Handful of beansprouts 

 Handful of Pea shoots 

Noodles 

METHOD

1) First put your chicken breast in tin foil in the oven for about 30 minutes for 180 degrees fan (keep checking to make sure its cooked to how you like it) 

2) Fry your onion, chilli and garlic with oil in a 1.5 l pan on medium heat  

3) When these have slightly softened add your Chinese five spice and 2 teaspoons of soya sauce and stir until softened  

4) In a measuring bowl add ingredients 1,2,3,4 and 5 then pour 700 ml of boiling water to the measuring bowl and mix 

5) Add the measuring bowl broth to the pan with the onions- add whites of spring onions and put simmer on low heat for 15 minutes  

6) When 15 minutes is over taste and see if you would like to add any sauces then add your beansprouts and simmer for another 10 minutes until beansprouts are cooked 

7) Add more water if you want more broth  

8) When the chicken is fully cooked add the juices to the broth for more flavour  

9) Cook your noodles separately and add to your bowl, ladle your broth into the bowl and top with your chicken, spring onions and pea shoots
